John Buttolph never intended to be chief executive at a Southern chicken-and-biscuits chain. But when Mrs. Winner’s filed bankruptcy in 2010 after a bout of financial troubles, the corporate attorney was owed around $200,000 in legal fees. To get paid, he took control of Mrs. Winner’s trademarks and taught himself how to run a franchised restaurant business. Now he has a new career and hopes for a revival.
